This applies to not just the wiki, but also areas like the News module as well. There is also an Etherpad plugin for Redmine.

Might look at creating a plugin similar to the Redmine CKEditor plugin but using WikiCloth: https://github.com/nricciar/wikicloth/

Big project, might get most of the way using Etherpad, but lots of research and testing to do first.
