I2C vs Analog Input for Load Cell Input

Currently we have the load cell circuit hooked into analog input 0 on the Arduino and the temperature sensor hooked into analog inputs 4 and 5 in I2C (two wire serial) mode. There's been talk of switching the load cell to an I2C interface as well. The only I2C chip that we've found so far that has a sample rate fast enough is of course surface mount, which would add to the labor/cost for the Shepard 2.0 kit. I'm wondering if we shouldn't just keep the setup the way it is now and save the common I2C interface bus for future test stands.
